Well this is new for me... a savoury recipe!! I asked you guys over on my Instagram for some ideas, and what you'd like to see next and we are starting off with these little cheesy bombshells. Being a sweet tooth girl, I was pleasantly surprised how yummy these turned out, they are in bite-size pieces to be the perfect pre-dinner nibble, or afternoon snack. These would also be an awesome homemade party-food option, considering we can now meet inside in the UK :) So, please take a read and let me know in the comments or over on @ellahamiltonxo if you give these a try!
Makes 30 mini scones
You will need:
225g self raising flour
1tsp baking powder
A pinch of salt
A pinch of pepper
A pinch of praprika
120g mature cheddar (you can use any cheese of your liking, but this worked for me!)
100ml semi-skimmed milk
50g cubed and chilled butter
Cookie cutters (or be creative, see my option in the method)
Start by pre-heating your oven to 180 degrees celsius.
First of all, add your flour, baking powder, salt and pepper to a bowl. At this point, you should also add your paprika, but do this to your taste. I sprinkled about 1/2 tsp worth and it just adds that extra something, if you know what I'm saying- but you can leave it out altogether if you prefer.
Next, you need to add the chilled cubes of butter and combine the mixture together with your fingertips- this should create fine crumbs.
Then sprinkle in 100g of the cheddar into the crumbly mixture. Make sure that you mix well for an even distribution throughout, but at this point you don't want to over work the mixture, because the butter will begin to melt.
Make a well in the centre of your mixture and begin pouring in your milk, only a splash at a time. This is when you can start to form your dough. Each time you add a little bit more milk, you can kneed the dough together more and more until you are left with a fairly soft but firm mixture.
Now for the fun part. Tip your dough onto a floured surface and roll it out until its about 2cm thick. Take your mini cookie cutters, but you can also take the top of a Chilly's bottle- tried and tested method, cutting as many circles as you can. As soon as, you run out of dough simply re-roll it until you have used all of the mixture.
Place your mini scones onto your tray covered with baking parchment. And finally, before placing the scones in the oven you want to glaze them with a little extra milk and sprinkle over the last of your cheddar.
Bake for around 13mins or until golden.
