I would definitely say that sometimes it is the simplest and easiest of recipes that are the best. My homemade granola is just that, using only cupboard ingredients you can whip this recipe up in no time. I always have a batch of this granola ready, as it is ideal as a breakfast topping/cereal or even for grazing on throughout the day! Makes 10-12 servings
You will need:
200 grams porridge oats
5-6tbsp of honey (golden syrup is a good alternative)
1tbsp of coconut oil
1 tbsp heaped crunchy peanut butter
Handful of mixed nuts (make it your own- adding dried fruit, nuts or seeds)
A sprinkle of cinnamon
Be sure, to pre heat your oven to 180 degrees Celsius.
First, you will need to heat your peanut butter in the microwave for approx 20-30seconds, as this will allow it to loosen and mix easier with the other ingredients. Then, also melt your coconut oil in the microwave for about 15-20 seconds. Once you've heated both ingredients, add them to your mixing bowl.
Next, go ahead and add in your oats, stirring them in a little bit at a time to make sure they are fully coated in your mixture.
Afterwards, you want to add your honey. Don't be shy at this point- the more the better in my opinion!
Once this is fully combined, you can add your extra ingredients. I used cinnamon and mixed nuts, but you can totally personalise the recipe at this point. Keep mixing in these ingredients, until you're left with a sticky combined mixture.
Now, tip your mixture out onto a baking tray, spreading it out evenly in order for it to cover most of the tray.
You then want to bake for approximately 10mins, turning the granola half way through to ensure that it is fully cooked. The end result, should look a golden brown colour and don't worry if the edges are a little burnt, thats a sign of a great granola ;)
Once the granola is out of the oven, make sure you leave it to cool for at least 10minutes, allowing it to go hard and crunchy.
